Bruschetta with roasted peppers

Here’s a tasty recipe for bruschetta with roasted peppers:

Ingredients:

  • 1 baguette or ciabatta, sliced
  • 2-3 roasted red bell peppers (store-bought or homemade)
  • 4 oz (115 g) cream cheese or goat cheese, softened
  • 2-3 cloves garlic, minced
  • 2 tbsp olive oil (plus more for drizzling)
  • 1 tbsp balsamic vinegar (optional)
  • Fresh basil or parsley, chopped
  • Salt and pepper to taste
  • Optional: crumbled feta cheese for topping

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C).

  2. Prepare the bread:

    • Arrange the bread slices on a baking sheet and drizzle with olive oil.
    • Toast in the oven for about 5-7 minutes, until golden and crispy.
  3. Prepare the roasted peppers:

    • If using fresh peppers, roast them in the oven or on a grill until the skin is charred. Let them cool, then peel and slice them.
    • If using jarred roasted peppers, simply drain and slice them.
  4. Mix the cheese:
